Easy Chocolate Truffles

I love whipping these little truffles up when I know I will be having visitors. It's just a bit different to the usual Victoria Sponge (and no body knows how easy they are to make!) They are also great as gifts especially around Christmas time.

What you will need:
100g dark chocolate
50g unsalted butter
1 tsp of Vanilla Extract
1 tbsp of golden syrup.
200g of icing sugar
Chocolate sugar strands

Place 100g of dark chocolate and 50g of unsalted butter into a bowl and melt in the microwave  for 1-2 minutes (or over a pan of simmering water)

Stir in 1 tsp of Vanilla Extract and 1 tbsp of golden syrup.

Gradually beat in 200g of icing sugar until a stiff paste is formed.

Form into 16 balls and roll in chocolate sugar strands.

Leave to set (and obviously lick the mixing bowl clean!)

Store in an airtight container for 2 weeks.
